Spanish Paella with Fish & Meat

It was a wonderful evening and I had to improve ...

200 g calamari rings
15-20 shrimps
20-30 mussels

250 g sliced tomatoes (without skin, seats)
150 g green peas
150 g green beans
400 g paella-rice
4 gloves of garlic
1.5 liter chicken-broth (preferred 50:50 fond and broth)
125 ml white wine
2 onions (fine diced)
parsley, olive-oil, salt, pepper, citron, safran (or a good seasoning, like the one below)

Preperation
* First fry the meat (starting with the chicken) with some olive-oil and salt, once done take out of the pan.
* Fry the fish and half of the shrimps (the remaining will be needed for decoration), once done, take out.
* Fry onions and garlic slightly (do not let them get brown), add pepper, tomatoes.
* Add rice, stir until it is glassy.
* Add safran
* Add wine, stir until  rice took all wine.
* Add broth until rice is covered. Add further broth to always keep it covered.
* after about 10 min. add peas, beans, calamaris, half of the mussels (remaining are needed for decoration), shrimps
... stir all.
... let it cook about another 5-10 min.
* Add salt and pepper as needed.
* Add decoration-shrip and mussels on top
* Add thin sliced butter and parsley on top for decoration
... serve
.. enjoy ;-)

  1. Once everything is cooked and before you add the broth you can mix all together (except the pieces for decoration) and stir a bit until rice is glassy. Then distribute well the elements in the pan and add the broth. After that is better not to stir the rice anylonger, to avoid it getting sticky. Definitively a dish to enjoy!
