Pickled salmon

A wonderful sunday-brunch- or party-fingerfood-dish !

Ingredients:

1 Salmon filet (about 1kg) with skin
2 midsize carrots
1 leek
1/2 celery-root (sub with celery leaves if necessary)
1 fennel
3 onions
2 oranges (organic)
1 lemon (organic)
1 bundle of fine cut dill
100g salt/sugar-mix (50:50)

Preparation:

* cut all in small dices or slices an mix properly
* cover salmon from all sides and let it rest for about 48h in the fridge, flip it once after half the time.

Cut in thin slices and serve with fresh rolls or white bread.

The pickled salmon could last for a few days in the fridge .... in our family it never did ;-)
