Zucchini quiche

a great way to use zucchini....

Ingredients:
250g flour
1/2 tsp salt
125g butter
80ml ice cold water

1 tbsp butter
1 onion (finely chopped)
2 garlic gloves (finely chopped)
1 tbsp rosemary (chopped)
700g zucchini (cut in thin slices)
250ml whipping cream
1 tbsp lemon juice
2 eggs
3 tbsp grated Parmesan cheese
salt and pepper

Procedure:
Mix the first four ingredients together. Rap in foil and set aside for at least one hour or over night in a cool place.
Roll the dough out and put it in a Quiche form. In a pan fry the onion and garlic with the rosemary in the butter. Add the zucchini slices and cook over medium heat for about 10 minutes. Set aside and let cool off. Whisk the cream and the lemon juice and add eggs, cheese and salt and pepper. Spread the zucchini on the dough and pour the cream-mix on top. Bake at 200°C for 30-40 min. The Cake should be golden brown. It tastes the best when its lukewarm.
